Thai Basil Chicken
Fried chicken tossed through soy, oyster and hot sauce with whole red chillies and a fistful of basil thrown in at the end.
Ingredients
Chicken and vegetables
- 200 g Chicken leg, sliced
- 1 tbsp Corn flour
- 1/2 Egg
- 1/3 cup Oil
- 1/2 cup Onion, cut in wedges
- 1/2 cup Green bell pepper
- 3 Whole red chillies
- 5 Fresh basil leaves
- 1/3 cup Green onions
- For frying 1 Egg
Sauce
- 1 1/2 tbsp Soy sauce
- 1/2 tbsp Oyster sauce
- 1/2 tbsp Hot sauce, homemade chilli sauce or Tabasco
- 1/2 tbsp HP sauce
- 1 tsp Black pepper, ground
- 3 tbsp Stock or water
- Pinch Salt
- Pinch Sugar
Method
- Coat Put the sliced chicken in a bowl with the egg, corn flour, salt, pepper and oil, mix well, and deep fry until golden brown.
- Hot sauce In a saucepan, cook the hot sauce for 1 minute.
- Toss Add the chicken, the vegetables and all the seasoning and cook for 2 minutes on high heat.
- Finish Add the water, bring it to the boil, and tighten with a little corn flour slaked in cold water if it needs it.
- Serve With boiled rice, a fried egg on top and the basil leaves over everything.
