Classic Granola

This is the one that started everything. Oats toasted slow with almonds, walnuts, cashews, pumpkin and sunflower seeds, and cranberries, with honey as the only sweetener we add.

What is in it

Rolled oats, Mixed nuts (almonds, walnuts, cashews), Pumpkin seeds, Sunflower seeds, Cranberries, Natural honey.

Allergens: Contains nuts. Made in a kitchen that also handles wheat, dairy and eggs.

Everything else in the range came out of this recipe. It was the one I kept making at home, in a domestic oven, in batches small enough to finish before they went stale, and it stayed the same long enough that people started asking me for it.

How it is made

The oats go in low and slow, and that is the whole trick. Toasted fast, oats colour on the outside and stay soft in the middle, and the granola turns soft again within a week of being bagged. Toasted low, the moisture actually leaves, and what you get is a cluster that stays crisp in the pouch until the pouch is empty.

The nuts go in whole or roughly broken, never milled, so the almonds, walnuts and cashews each still taste like themselves. Pumpkin and sunflower seeds go in with them. Honey is the only sweetener, warmed first so it coats rather than pools. The cranberries are folded through at the very end, off the heat, because anything dried that goes into a hot oven comes out like leather.

What it tastes like

Toasted more than sweet. If you are used to supermarket granola you will notice the sugar missing before you notice anything else, and it takes about three days to stop noticing. After that most people find the sweet ones difficult to go back to.

Nothing in it is sharp. No cinnamon heat, no citrus, no salt lifting the top of it. That is deliberate. This is the bowl a family eats every morning, and the things that make a granola exciting on day one are the same things that make it tiring by day ten.

How to eat it

Cold milk is the default. Yoghurt with a spoonful on top is the one I eat most. It also holds up in a jar overnight with milk, which is the closest you get to overnight oats without planning the night before.

A 500g pouch is roughly two weeks of breakfast for one person, or a week for two.

Which size to order

Start here if you have never had it. The 200g exists so you can find out without committing, and most people who order a 200g Classic order a 500g next.

Questions people ask

How long does it keep?
Six weeks in the sealed pouch, and it will not soften before then. Once it is open, roll the top down and it holds its crunch for about three weeks. There are no preservatives in it, so it does eventually go stale rather than lasting forever.
Is it very sweet?
No. Honey is the only sweetener and there is less of it than you are used to. Most people notice on the first bowl and have stopped noticing by the third.
What is the difference between Classic and Crunch?
Crunch has no cranberries and considerably more nuts, so it is less sweet and much heavier on texture. Classic is the balanced one, and it is where most people start.
Can I order it as a gift?
Yes. Put their address as the delivery address and add your note in the order instructions, and it goes out with the parcel.
