Messy Cookie

A thick cookie built around a hazelnut chocolate centre. Break it open and the middle runs. That is the whole idea, and it is where the name came from.

How it is made

The filling is set cold and wrapped inside the dough before baking, so it is sealed in rather than pushed in afterwards. Roasted hazelnuts go through the dough as well, so there is texture around the soft middle instead of only sweetness.

It is baked hotter and shorter than the Choco Chunk. The outside has to set before the centre gets too far, and getting that wrong gives you either a leaking cookie or a solid one. There is no way to tell from the outside which you have made, which is why these are baked in small numbers and why they cost what they cost.

What it eats like

Crisp shell, soft dough, and a centre that moves. The roasted hazelnuts are the part people do not expect: they stop it being one soft note all the way through and give you something to bite against. Warm it slightly and the centre goes properly liquid, which is when it is at its best and at its most difficult to eat.

There is no polite way to do it. Do not order this one for a meeting, and do not eat one over a laptop.

How to serve it

Fifteen seconds in a microwave, then a minute of waiting so the centre is warm rather than hot. Broken in half over ice cream it is absurd.

The honest bit

It is the most expensive thing we bake and the most trouble to make, and it is the one people most often order for somebody else. It is also the one most likely to arrive looking imperfect, because a filled cookie that has travelled is a filled cookie that has moved around inside its box.

If anybody in your house cannot have hazelnuts, avoid this one. It is not a trace. It is the middle of the cookie.

Questions people ask

How many are in a box?
Two. Everything in the brownie and cookie range is sold as a box of two.
Does it contain nuts?
Yes, hazelnuts, and not in small amounts. Roasted hazelnuts run through the dough and there is a hazelnut chocolate filling in the centre. Our kitchen also handles wheat, dairy, eggs and other nuts.
How long does it keep?
Three days at its best. The centre firms up as it sits, so from the second day onward it is worth warming before you eat it.
Is the centre liquid when it arrives?
No. It arrives at room temperature and set enough to hold its shape. Warming it is what makes it run.
